“Sterren voor Ivy? Wat een onzin. Doe gelijk maar een melkweg, zouden we zeggen.” Dat schreef 'Rtolido' vorige week na zijn bezoek aan het Rotterdamse Ivy. Hij at er al vlak na de opening begin maart, maar is nog steeds laaiend enthousiast.
“Wat is de keukenbrigade van die krankzinnig creatieve François Geurds ondertussen goed op gang gekomen. En wat een mooie, verrassende creaties op de nagenoeg totaal vernieuwde kaart. Geurds is een van de weinige topchefs in Nederland die ook echt een goed hoofdgerecht weet neer te zetten (over de voor- en tussengerechten zullen we het maar niet eens hebben). En als je dan na zijn ondertussen al befaamde combinatie van duif, foie en kersensorbet denkt alles gehad te hebben komt hij met een dessert van macadamia, vanille-ijs en foie overgoten met olijfolie. Dat tart knetterend de verbeelding en we kunnen nu nog niet geloven hoe goed deze sensationele combinatie smaakt. Zelfgebakken mini-broodjes? Bekroonde koffie? Kan er ook allemaal nog wel bij. Ivy is volop op stoom richting de onvermijdelijke eindbestemming: het beste restaurant van Nederland.”
