De expats, politici en andere internationaal-geluimden keken vol verwachting uit naar de opening van het Hilton The Hague. Is het nieuwe Grand Café Pearl een aanwinst? Zeker, al blijft het een hotel-restaurant. Mooi is Vermeers Meisje met de parels dat oplicht achter het barmeubel. Ondanks de vijf sterren is de hotelschoolbediening nogal knullig. Voordeel is dat ze geen idee hebben hoe vol je een wijnglas schenkt. Nog net niet tot de rand in dit geval. De wijnkaart is zeer uitgebreid, met wat eigen kennis kom je hier goed beslagen ten ijs. Het eten is prima en het wordt op tempo geserveerd. Bisque met perfect gekookte garnalen, een mooi stuk zeebaars. Het is een misschien niet waanzinnig spannend, en alles lijkt te zijn gegaard in de combisteamer. Voor de vis is die bereiding prima, bij de lamsrack mis je de grillsmaak. Kom hier op een vroege vrijdagavond, als de hotelgasten aan het borrelen slaan.

Expats, politicians and other internationally-oriented people eagerly anticipated the opening of the Hilton The Hague. Is the new Grand Café Pearl an asset to the city? It sure is, although it’ll always be a hotel restaurant. Pearl’s most striking feature is a beautiful backlit reproduction of Vermeer’s ‘Girl with a pearl earring’ above the bar. Despite its five stars, the waitstaff is rather clumsy. One advantage: they don’t have a clue how much to pour into a wine glass. Almost to the brim, in our case. The wine list is extensive, so some basic knowledge would serve you well here. The food is excellent and served with a rapid pace. We had bisque with perfectly cooked shrimp, and a nice fillet of sea bass. Perhaps not terribly exciting food, and everything seems to be cooked in a steamer. For fish that’s the perfect method of preparation, but lamb racks could do with a bit of grill flavor. The best time to visit is an early Friday night, when hotel guests start their cocktail hour.
